The oil mill at Casas de Hualdo, entirely surrounded by OUR OLIVE GROVES, was built on the land of the same name, inside the Estate. The olives, picked directly from the trees, get to the oil mill still alive, where they are cared for and are grinded instantly, preventing any fermentation. Only the best raw materials are used for the elaboration of olive oils under our brand.

All of the processes, from the reception area to the bottling process feature the latest technologies and have been carefully designed to extract the best from the olive, very different from the traditional and aggressive productive-extensive models that aimed to use all of the olive paste.
The elements that come into contact with the olive are made of stainless steel. The extraction line is specifically designed to prevent oxidation and heat on the olive paste, which spends little time on the reception area to prevent damage to the olives.
The maximum hygiene conditions are present throughout the entire process and, in just a few hours, the oil is stored under optimal conservation conditions. All this happens on a work scale that was previously unheard of for oil of such quality, getting the most from this ancient fruit.
By grinding only olives from our own olive groves, the quality and traceability controls are almost perfect. Olive processing is performed under strict temperature controls to obtain the most aroma and antioxidants.
Olive oil storage is no less important and, for that reason, it is done in stainless steel tanks with inert atmosphere, and bottled practically upon an order. This way, the olive oil from Casas de Hualdo remains as stable as possible.
